As consumers' interest in healthy foods continues to rise, there are considerable opportunities for food manufacturers to develop new products to meet growing demand. A basic knowledge of nutrition has therefore become an increasingly important prerequisite for food technologists, product development, and sales and marketing personnel working in the food industry.This course will provide non-nutritionists with sufficient knowledge of basic nutrition to cope with the nutrition-related aspects of their job. Interactive in style, the course will provide an introduction to the areas of nutrition, food labelling and nutrition and health claims legislation, with a focus on the practical application of these issues to the food industry. Guidelines for healthy eating will be explained, and the importance of the key macronutrients in the diet will be highlighted. In addition, the requirements for vitamins and minerals in the diet will be described and discussed. Guidelines for nutrition labelling on food products will be explained, and an overview of the current status of European nutrition and health claims legislation will be given. Throughout the course, examples of currently available functional products will be given, and delegates will have the opportunity to sample functional products relevant to the topics discussed.
